can someone add their email address to a contact list

a friend was corresponding with some vacation rental places and she discovered that their e-mail addresses ended up in her contact list. And there was more than one company that had done it.

Have you heard of this?

When you send an email to someone in most email clients, you are also adding them to your contact list.
