How do I make sure DosBOX has access to the highest possible amount of memory when playing Descent, so the chance of the game freezing up and/or needing to be restarted is minimized?
Also, is there a way to reduce how much the ship bounces up and down (especially when idle)? Not serious, but if it can be controlled I'd like to know.
Lastly is there a way to make it so flash missiles don't totally blind me 100%? Like 90% blinding instead for instance.

Why don't you use D1/2x rebirth? it bypasses having to use DOSBox.

Rebirth isn't as pure as Dos and doesn't seem to have as good of an RNG. Robots may seem to drop power ups too much making it easier.

Re: Maximum DosBOX memory + few other questions
Setting the amount of available memory in dosbox is done in the dosbox.conf file. More specifically with the "memsize" variable, the default is 16 MB which should be enough for Descent 1. If you really need more, you can bump it to 32 MB. The maximum possible amount is 63 MB (there is always 1 MB of "low" memory in addition to this setting for "high" memory, and the address space within dosbox is 16 bit which limits it to 64 MB total low+high).
