Okay, I'm stumped - any ideas on how this guy achieved this trick?

Right after the 3rd person cuts the cards, you can see him do something with the stack while he's talking to the crowd and setting up the story he's about to tell. Among other things he does a quick re-shuffle.

There you have it.

I'm more interested in how he does the arms thing than the card trick.

The arm thing is easy. He breaks his grip and flips his left hand over as he points to someone and says: \"just clench your fists mate..\" at 1:10 minutes.

if you rotate your left hand 180 degrees counter-clockwise from the way he shows to start with you can do it. Notice his elbows before and after that point.

The cards are more complex. I don't KNOW but i did notice he's constantly looking at the deck and manipulating the cards.
